Salmon and avocado pasta salad

Serves 4

Ingredients:

15 oz. salmon
6 oz. penne or other short pasta
3 ripe avocados, diced
1 bunch green onion, thinly sliced
1 red bell pepper, thinly sliced
1 lime, juiced, zest grated
½ cup sour cream or plain yogurt
3 tbsp. cilantro, chopped
2 tbsp. light mayonnaise
1 tbsp. tomato paste
2 tbsp. french dressing
Turmeric to taste

Preparation:

In a pot of salted boiling water, cook the pasta al dente. Drain.
Drain and allow to cool.
Toss with the french dressing.
Drain and flake the salmon.
Add to the pasta with the green onions, sliced bell pepper and cilantro.
Stir together the mayonnaise, tomato paste, sour cream, lime juice, grated rind and turmeric until thoroughly combined.
Toss the pasta salad with this mixture.
Season to taste with salt and pepper.
Cover and chill.
Just before serving, add avocados to the salad.
Enjoy your meal.
