Tabouli salad

Ingredients:

1/3 cup bulgur wheat
3 tomatoes ripe, diced
2 clove garlic crushed
4 scallions (white and green parts) sliced thin
8 bunches fresh parsley, chopped
1 bunch mint fresh
3 lemons juice
1 tbsp. olive oil to taste
salt and black pepper to taste

Preparation:


Cover bulgur with warm water and soak for 15 minutes. Remove the excess water.
Combine the lemon juice, crushed garlic, salt and black pepper with the bulgur.
Allow to rest 30 minutes, until bulgur is soft.
Wash the mint and parsley and dry it well.
Chop parsley and mint finely.
Combine the scallions, tomatoes, parsley and mint. Add bulgur mixture.
Toss with olive oil. Add lemon juice. ,
Add salt and pepper to taste.
Serve chilled.
